HOW TO MAKE 4 INGREDIENTS CASHEW FROSTING?

Making cashew frosting is so easy and convenient for a quick fancy dessert decoration. All you need is a blender or food processor, and these 4 basic whole food ingredients:

  • cashew nuts
  • lemon
  • vanilla extract
  • soy milk.

CASHEW BUTTERCREAM FROSTING FOR PIPING

What is great about this 4 Ingredients Cashew Frosting recipe is that you can add more or less milk depending on what you want to use the recipe for, to make the icing more or less liquid!

Below is a guide on the modifications you can make depending on what dessert you intend to make.

  • For any baked goods such as cakes, muffins, apple crumble, etc., or to add on top of your breakfast, just follow the recipe as given!

  • For piping, you want a much thicker frosting with a buttercream texture. Simply half the amount of plant milk for this matter! You can then use it to decorate cupcakes or cakes.
  • For other treats such as cinnamon rolls, you might want to make your cashew frosting slightly more liquid (so just about 20 more ml of milk). But it would also work great with the given measurements! I would also recommend adding some sweetener, such as maple syrup or white sugar, if you are making this recipe for cinnamon rolls. About 2 tablespoons of sweetener would be enough.

Equipment

  • High speed blender or food processor

Ingredients

  • 100 g cashew nuts - soaked*
  • 1/4 lemon juice - or lime juice
  • 1 tsp vanilla extract
  • 150 ml soy milk** - or any other plant milk

Optional

  • 2 tbsp sweetener - liquid or powdered

Instructions

  • *Soak the cashews for minimum 4 hours or overnight; or for at least 30 minutes in hot water (better overnight).
  • Watch the one-minute recipe video (scroll down a bit) to see all instruction steps.
  • Drain the cashew nuts and add all 4 ingredients into a high-speed blender or food processor.

  • Blend until smooth. You might need to blend from 1 to 5 minutes depending on the power of your blender.
  • Transfer into a bowl (or in a piping bag), cover and store in the fridge for up to 4 days.

  • To ice your desserts, pour on top of cakes or dip the top of your cupcakes/ Carrot Cake Muffins in the cashew frosting.
