SEEDED WHOLEWHEAT BREAD (with tips for avocado toasts)

It’s already been over 4 months that I haven’t had some nice freshly baked French baguette. And, as a French woman living in Scotland, it would be selfish of me to wait any longer without sharing the recipe for an exquisite recipe of fresh, seeded homemade bread.image

However, for a homemade bread to be perfect it also has to be easy to make. Which is why I made sure to come up with a recipe that doesn’t require a day off to end up with a bread of quality. Because we make it to eat it as soon as possible, right?

This recipe is also oil-free, vegan, very healthy and nutritious; as it contains superfood such as cinnamon, tahini, and sunflower seeds. music-94

Amazing to have on side of a main dish, for instance rice and lentil dhal.

And even better to toast it and use it to make a variety of toasts; vegan butter, avocado, peanut butter, hummus…


And here comes the time to share an easy tutorial for the BEST avocado toasts.

For 2 avocado toasts:

  1. Toast 2 slices of seeded wholewheat bread, either in a toaster or in the oven.
  2. Meanwhile, use a fork to mash 1/2 avocado in a bowl.
  3. Add to the bowl the juice of 1/4 lemon and 1 tbsp of peanut butter, and mix again with the fork.
  4. Once slices of bread are toasted and crispy, add half of the melange on each slice of bread.
  5. And finally, enjoy slowly and mindfully these warm and appetising peanut butter avocado toasts!


Calories per serving: 220 – Macros: 8g P/ 35g C/ 6g F

Prep time: 10 minutes –     Cook time: 25 minutes –     Yield: 8 servings


  • 300 g malthouse bread flour (or wholemeal bread flour)
  • 100 g white flour
  • 8 g easy bake yeast
  • 1 tsp baking powder
  • 1.5 tsp salt
  • 1/2 tsp cinnamon
  • 20 g tahini
  • 200 ml warm water
  • 50 g sunflower seeds


  1. In a mixing bowl mix together the flours, yeast, baking powder, salt and cinnamon.
  2. Add tahini and warm water, and mix again with a fork. When the texture gets too thick, use your hands to combine the dough together. Keep mixing with your fingers until all the ingredients are well combined and form a rough
  3. Cover with a clean tea towel and let the dough rise for 1 hour.
  4. Put baking sheet on a flat baking pan.
  5. Once the size of the dough has almost doubled, add the sunflower seeds and knead the dough again.
  6. Shape the dough into an oval form and put it on the baking
  7. Bake for 25 minutes at 200°C (392°F).
  8. Let cool for at least 10 minutes before slicing, and enjoy with topping and siding of your choice!music-94


Prep time does not include the one hour period required for the dough to rise.
