Hummus Caramelised Onion Pizza (no cheese)
Time to say NO to frozen or takeaway vegan pizzas and YES to homemade ones. Especially when we are talking of a Hummus Caramelized Onion Pizza. A pizza with no meat, cheese, or any animal product, and that you can adapt to your preferences! Without counting the fact that making your own pizza is so much more fun and satisfying than buying it; plus you can garnish it as much as you want!
Servings: 4 people
non-stick pizza tray
- 150 g crushed tomatoes or tomato paste
- 4 tbsp hummus

For the pizza dough
In a mixing bowl, add the flour, yeast, and salt. Mix with the back of a wooden spoon. Add warm water and oil to the mixture. Mix with the back of the wooden spoon, then knead with your hands until dough is uniform and comes together. Shape the dough into a ball and cover it with a reusable lids* or a clean tea towel for at least 1 hour, until dough has almost doubled in size.
For the stir fry
Meanwhile, heat cooking pan with olive oil and add the onion. Cook on high heat until slightly brown.
Add garlic cloves, red pepper, and spices (turmeric, ground coriander, chilli powder, ground nutmeg, and cumin seeds), and cook for 2 more minutes on medium heat.
Preheat oven to 200.C (392.F).
Add cherry tomatoes and courgette and mix well with wooden spoon.
Assemble the pizza
Shape the pizza dough into a pizza base using a rolling pin. Place the pizza base on a non-stick pizza tray.
Spread the crushed tomatoes on the pizza base and top it with the veggie stir fry. Spread the stir fry evenly on the pizza.
Bake for 17 to 20 minutes, until the edges of the pizza base are slightly bown.
Top with hummus.
*This is the reusable lids I use to cover my pizza dough. I was hesitant at first about buying this product. But it is really really worth the 7 pounds as you get all sizes you need and won't ever need to use cellophane film wrap again! Useful and much better for the environment; I definitely recommend!
